Have a multi-sectioned dashboard and want to email it as a PDF. With 7 days of data, it creates a 0 byte .pdf, Lower the absolute timing to under 7 days and it works. Do not receive a timeout error? Not sure if there is a data point or creation time limit?

rasterizer.log had this message: I increased the userproperty to 180000ms. The second item, processlimit is not an item in the config. Will wait till this evening to restart server as this is prod.

Situation you described is not caused by 7 days long time range, but by huge amount of data on the report. There is no limitation on time range here.
We need some more information to analyze situation, find out the detailed root cause and (perhaps) suggest settings allowing you to export such a big report to pdf. Please, provide:
* server version (I guess it is 2017, but which SP?)
* server.log covering time when 0 bytes long pdf file was generated
* rasterizer.log covering the same period of time (you'll find it in the same directory as other logs)
